Today, I made one layer cake, 4 dozen cupcakes, and 4 dozen French macarons, so by the time I finished all that and cleaned it up, I needed a really fast and easy dinner. Costco sells a pre-cooked smoked pulled pork that is really delicious. I wrap half the package and freeze it, and heat up the other half for our dinner tonight.

The first thing to make is the cole slaw, using the other half of the cabbage I saved from the sausages and cabbage dinner last week. Begin by shredding the cabbage. Toss it with a teaspoon of salt, and place it in a strainer in the sink to wilt.

Peel and shred the cabbage.

And dice half a shallot.

Place the shallot, 1/2 cup buttermilk, 2 tablespoons mayonnaise, 2 tablespoons sour cream, 1/2 teaspoon cider vinegar, 1/4 teaspoon dijon mustard, 1 tablespoon minced parsley, and 1/2 teaspoon pepper in a bowl. 

Whisk it together. Rinse the cabbage and squeeze it dry in a clean kitchen towel. Add the cabbage and carrot to the dressing and toss to combine.

Now on to the meat. Just microwave it to heat.

Add barbecue sauce. Sweet Baby Ray’s is our favorite!
