This is my absolute favorite lunch. I eat it almost every day. It’s fast to make, really delicious and satisfying, and very healthy! Here’s what you’ll need:

The key ingredient is the Koyo organic ramen, which is available at Harmon’s here in Utah. Unlike the other ramens, which are dried out by deep frying the blocks of noodles, causing them to be laden with fat and calories, these noodles are air dried, and therefore have very little calories and fat, and the texture is much better! The whole package is one serving, too, unlike the other ramen which tries to trick you into thinking it’s not so bad by saying its package has 2 servings.

To start, I bring 1 1/2 cups of water to a boil. Add the seasoning packet and a handful of the spiralized carrots and sliced baby bok choy.

Add in the noodles, and set a timer for 4 minutes.

Stir occasionally, and when there’s 2 minutes left on the timer, add the cubes of firm tofu.

Once the time is up, stir in a teaspoon of hoisin sauce and as much sriracha sauce as you can handle!

Pour into a bowl and enjoy the goodness!
