We love all seafood at our house, but especially shrimp! Today I’ll roast shrimp and asparagus together under the broiler, and then toss them with pasta and the last of the pesto sauce I made last week. Here’s what you’ll need:
I get these extra large shrimp from costco. They are incredibly good quality! Begin by adding the pasta to a large skillet, and add enough water to just cover.
Ser over high heat, and set a timer for 15 minutes. Meanwhile, heat the broiler to high, with a rack on the second from the top position. Trim the tough ends off the asparagus and discard.
Cut the stalks into 2 inch pieces and place in a large bowl. Toss with a bit of olive oil, salt, and pepper.
Spread over half a parchment lined baking sheet.
Shell and devein the shrimp, as I showed a couple weeks ago. Place them in the empty bowl, and toss with 1 tablespoon of the pesto. Spread on the other half of the baking sheet.
Broil 3 minutes, watching like a hawk!
Remove the pan from the oven and use tongs to flip all the shrimp and give the asparagus a stir.
Return to the broiler for just 2 more minutes.
Meanwhile, when the pasta is done, carefully pour off 1/2 cup of the cooking water, then drain the rest and return the noodles to the pan. Don’t forget to set aside a totally plain plate of noodles for your super picky 5 year old.
Toss the noodles with 2 tablespoons pesto, 2 tablespoons cream, and the pasta water.
Add the shrimp and asparagus and toss to coat everything. Taste, and add salt and pepper as needed.
