Today’s dinner is really simple. I will sauté a single chicken breast, boil some pasta and asparagus, and then combine it all with some of the tomato and arugula pesto sauce that I made for the homemade pizza. Here’s what you’ll need:

First, trim the tough ends off the asparagus and discard. Cut the remaining stalks into 2 inch pieces.

Now cut the chicken breast into small pieces, and sprinkle with salt and pepper.

Heat 1 tablespoon of ghee or olive oil in a skillet over medium high heat. Saute the chicken 4 minutes.

Stir in a tablespoon of the pesto and set aside. 

Meanwhile, place the pasta in a very large skillet with 1 teaspoon of salt and just enough water to cover. Place over high heat and set a timer for 15 minutes. Stir occasionally.

When the pasta has 3 minutes left, add the asparagus.

Keep cooking until the pasta is tender to your liking, and the water is mostly gone. Do not drain. Add 6 tablespoons of pesto and stir in.

Add the chicken in, and serve!

This is a lot of food, and I made this much because I am taking some to a neighbor who just had surgery. One of the nice things about planning meals is, if you have a neighbor who needs some help, you always have dinner ingredients at the ready! I have a giant package of styrofoam clamshell containers and mini condiment cups from costco, which I use to take dinners to people. This way, it’s ready to eat and they don’t have any dishes to wash or to return to you.
