Vegetarian night! This is a really quick and super delicious baked pasta. Here’s what you’ll need:

Heat the oven to 375. Place the pasta in a large skillet with enough water to cover and a teaspoon of salt. Turn the heat to high and set a timer for 15 minutes.

Test the pasta for doneness. When it’s as tender as you like it, drain and return it to the pan. Add the entire jar of spaghetti sauce.

Mix it together, and then spread half the pasta in a greased 9 by 13 pan.

Dollop on the entire container of cottage cheese and spread it out. Cottage cheese has a wonderful tangy flavor that adds a lot more flavor than the traditional ricotta.

Add half the package of mozzarella cheese.

Now add the rest of the noodles.

Then the rest of the mozzarella. I like to sprinkle mine with Italian seasoning blend as well, which blooms in the fat of the cheese and makes a delicious aroma!

Cover with foil and bake 25 minutes until all melted and bubbly.

Let cool 5 minutes while you toss together a salad, and then serve!
