Today I had an errand to run where I didn’t get home until dinner time, so I needed a make ahead meal. Hooray for my new pressure cooker!

I started by chopping an onion.

I added it to the pressure cooker insert along with 1 cup of barbecue sauce and 1/2 cup water.

I mixed that together. Next, I seasoned 3 large bone in split chicken breasts with my favorite spade L ranch chicken seasoning.

And nestled them in the pot.

Then I took 3 sweet potatoes, peeled them, and cut them into half inch chunks.

I placed those on top of the chicken, and seasoned with fresh ground black pepper.

Then I used the poultry setting; high pressure for 15 minutes.

Last, I set the timer to have the machine turn on in 2 hours and 30 minutes  (at 6:00). When I get home, I’ll make a green salad and serve it up!

This meal came out so flavorful and delicious!
