Grilling season continues with caramelized onion burgers!

Caramelized onions are delicious, but can be a time consuming pain to make. You have to cook them for a long time, stirring over low heat so they slowly soften and brown without burning. However, I have discovered a short cut… the microwave! By cooking the onions first in the microwave, I can soften them, and then finish the caramelizing process on the stove in about 10 minutes.

Peel, halve, and slice one onion.

Place the onion in a microwave safe bowl with 1/4 teaspoon of salt.

Cover, and microwave 3 minutes.

Give the onions a shake and microwave 3 minutes more, until they’re wilted down and softened. Be careful… the bowl and steam will be very hot!

Heat 1 tablespoon ghee or olive oil over medium high heat in a medium nonstick skillet.

Add the onion and cook until it begins to be spotty brown, 2 to 3 minutes. Now add 2 tablespoons water and stir until the water evaporates. This pulls up any browned onion bits and distributes that flavor evenly. 

Keep cooking until more brown spots develop, another 2 to 3 minutes, then add another 2 tablespoons water and stir. Cook and add water 1 last time, until onions are very dark, sticky, and sweet.

Meanwhile, heat your grill on high. Mix 1 1/2 pounds ground beef with 3/4 teaspoon of salt, 1/2 teaspoon pepper, 1 teaspoon garlic powder, and a few dashes of Worcestershire sauce.

Weigh out 6 four-ounce burgers.

Pat them into patties that are slightly thinner in the middle.

Scrape the grill grates clean, and add the burgers.

Close the lid and cook 5 minutes. Then, flip the burgers, close the lid, and cook 3 minutes more.

Add cheese, close the lid, and cook 1 minute to melt the cheese.

Serve!
