Today was a very busy day, so I knew I needed an easy, make ahead dinner. I had a coupon last week for a free can of Harmon’s taco simmering sauce, so I decided to give it a try in my slow cooker taco filling, substituting the simmering sauce for my usual rotel and taco seasoning.
I put a 2 pound pork loin roast in my slow cooker.
And added the can of sauce.
Put the lid on, and cook on high for 4 hours. Then shred the meat. I like to use a potato masher.
Then stir in a drained can of black beans.
To serve, I like to lightly char my tortillas right on my stove’s gas burners. It only takes a few seconds per side, so watch constantly!
We like colby jack cheese, mango salsa, and sour cream.
